Mario’s Story

Mario Jose Carbajal Sanchez (1955–2019) was a beloved father, brother, and community member whose life was marked by hard work, resilience, and love. Born in Merida, Yucatán, Mexico, he grew up with his parents and three siblings—an older brother, a younger sister, and a younger brother. His father passed away in the 1990s, but his mother, now in her nineties, remains a strong presence in the family.

At 16, Mario immigrated to Dallas, Texas, where he built a life rooted in family and community. He opened Taqueria y Panaderia Chichen-Itza, creating not just a business but a gathering place. Known for its delicious, affordable food, the taqueria became a lively spot, especially on weekends, where regulars and newcomers alike connected over good meals. His older brother still runs the panaderia at 5710 Richmond Ave, keeping part of Mario’s vision alive.

Mario was a devoted father who loved his family deeply. In his later years, he faced health challenges, including kidney issues that required ongoing treatment. He passed away in 2019 at the age of 63 due to complications from his condition.

Though he is no longer here, Mario’s legacy lives on in the family he loved, the community he nurtured, and the memories shared by all who knew him. Here, his youngest daughter, Estrella Sanchez, tells his story. Stay tuned for her own spotlight in the next post.
